If you can’t tell from most of my posts, we LOVE spicy foods! I buy cayenne pepper and crushed red pepper in bulk and there’s always an abundance of fresh jalapeños around. We recently purchased a grill so we’ve been cooking as much as possible with it, and what’s better than kabobs?! Even if you don’t have a grill you can still enjoy this simple, spicy, and delicious combination!
…..
Makes 8 kabobs
Ingredients:
1 Chicken breast
1 Green bell pepper
1 Sweet banana pepper
½ Red onion
6-8 Fresh pineapple chunks
Honey
1 Tbs red pepper flakes
Cracked black pepper to taste
Other items needed:
Cooking spray
Foil
8 skewer sticks
Cut your chicken, peppers, onion, and pineapple into large bite sized chunks.
Arrange them on the skewers and place on a large plate or platter. Drizzle honey over the kabobs and then lightly sprinkle with cracked black pepper and red pepper flakes.
We grilled ours but you can also use the broiler in your oven. For grilling, lay out a piece of foil and lightly spray with cooking spray. Cook on low for about 5-7 minutes. Flip kabobs and cook the other side for another 5-7 minutes. Serve plain or with barbecue sauce. Directions for the broiler are just about the very same. Lay a piece of foil over a large cookie sheet. Lightly coat with cooking spray and broil on low for 5-7 minutes. Flip, and cook the other side for another 5-7 minutes.
Enjoy!
