Black Bean and Corn Salsa

Tattooed Martha - Black Bean and Corn Salsa (3)

I first made this salsa after seeing it paired with Cajun lime tilapia at a restaurant. I knew I could come up with something fairly close and this was the result! Not only did I replicate it but I really punched up the flavor by adding more fresh ingredients and seasonings. It’s easy to make and becomes the perfect addition to any party!

Ingredients:

1 can black beans

1 can whole kernel corn (I used a small 8oz can instead since I wanted less corn)

1 cup tomatoes (two romas), finely diced and seeded

½ cup red onion, finely chopped

½ cup green onion, finely chopped

4 Tbs cilantro, finely chopped

1 avocado, diced

Juice from 1 lime

1 Tbs taco seasoning – Get my recipe for homemade taco seasoning here!

Drain corn and black beans and add to a large bowl. Add all other chopped vegetables except avocado. This is so you can pour lime juice directly on top of the chopped avocado to help keep the green color if storing overnight.

Add avocado and squeeze lime juice on top. If you put your lime in the microwave for about 15 seconds first you’ll get a lot more juice!

Slowly stir all ingredients together. Add taco seasoning and stir again until ingredients are evenly coated.

Serve with tortilla chips or you can add it on top of chicken or fish like we did on our Cajun lime tilapia!
