Picnic Pasta Salad
This simple crowd pleasing recipe is actually my mother’s! My nephew, Aaron, asks her to make it any time we have a party or get-together. We just had some family over this weekend since I’m in town visiting and we made a huge batch of this! It’s perfect for picnics or potlucks and only takes five ingredients to make!
1 sixteen ounce box or bag of rotini pasta
1 cup mayo
1 cup salad dressing (Italian is my favorite but you can literally use any kind!)
1 cup grated parmesan cheese
1 small can of peas (optional)
Fill a large pot about ¾ of the way full with water and bring to a boil. Add entire box of pasta and cook for 7-10 minutes or until al dente. Be sure to stir periodically to keep pasta from sticking.
While waiting for the pasta to cook, combine mayo, salad dressing, and parmesan cheese in a large bowl and stir until mixed well. Set aside until pasta is done.
Drain pasta in a large colander and run cold water over them to cool them down.
Shake out excess water and pour until bowl with mayo and dressing. Toss until pasta is evenly coated. If adding peas, drain them, then slowly stir into pasta. Place in the refrigerator to chill for 15-20 minutes, then serve!
It’s perfect to make the night before a picnic or party : )
