Rosemary and Basil Focaccia Bread
Focaccia bread is a simple and delicious alternative to garlic bread and is a great addition to any meal! Sometimes I even just enjoy it by itself.. I love my carbs!
3 cups all-purpose flour
1 tsp sugar
1 tsp salt
3 tsp active dry yeast (1 package)
1 cup water
2 Tbs olive oil for dough and another 3-4 Tbs to drizzle on top
1 tsp dried basil
1 tsp dried rosemary
In a large bowl, mix 1 cup of flour, sugar, salt, and yeast. In a small saucepan, heat water and oil until hot, but not boiling. Add warm liquid and egg to flour mixture. Blend on a low speed until all ingredients are mixed well. Continue to beat for 2 minutes on a medium speed.
By hand, stir in 1 ½ cups flour until dough pulls away from the sides or the bowl.
On a floured surface, knead in remaining ½ cup of flour for about 5 minutes or until dough is smooth and elastic. I like to knead in a pinch of basil as well so it gets cooked into the dough. Cover with large bowl and let dough rest for about 5 minutes.
Place dough on a greased cookie sheet. Roll or press until dough is about 10-12 inches in diameter.
Brush top with a light layer of olive oil, cover loosely with plastic wrap, and then place a towel on top. Set in a warm place to rise for 30 minutes.
Preheat oven to 400 degrees F.
Uncover dough, and with your fingers or the end of a spoon (I used a chopstick!) poke holes in the dough about an inch apart from each other. Drizzle 3-4 Tbs of olive oil over the top. Sprinkle dried basil and rosemary evenly over the top and place in the oven.
Bake for 15-20 minutes or until a light golden brown.
Let cool for about 10 minutes. Slice it up like pizza and serve warm with a side of olive oil to dip into!
