Honey Cornbread Muffins
Chili and cornbread are a cold weather classic, so I was excited to make my first batch this season. These cornbread muffins are the perfect complement to spicy chili!
1 cup yellow cornmeal
1 cup all-purpose flour
½ cup sugar
1 Tbs baking powder
1 tsp salt
1 cup milk
¼ cup unsalted butter, melted
¼ cup honey
Preheat oven to 400 degrees and fill a muffin tin with paper liners.
(1.) In a large bowl, mix cornmeal, flour, sugar, baking powder, and salt. (2.) In a separate bowl, whisk together milk, butter, honey, and eggs. (3.) Add the wet ingredients to the dry ingredients and stir until well blended. (4.) Distribute batter evenly among muffin cups and place in the oven.
Bake for 15 minutes or until light golden brown on top. Set muffins on a cooling rack for about 5 minutes.
Serve with a big bowl of chili and enjoy!
