Rum Spiked Pecan Pie
I’m always a fan of cooking with what I’m drinking, so when Sailor Jerry posted their Pecan Pie recipe, I couldn’t resist!
Makes 1 pie
1 cup dark corn syrup
1 cup sugar
2 Tbs Sailor Jerry’s Spiced Rum
¼ cup unsalted butter, melted
1 tsp vanilla extra
1 cup pecans, coarsely chopped
1/3 cup dark chocolate chips
One 9 inch frozen pie crust
Preheat oven to 375 degrees F and set out pie crust.
Whisk eggs together in a large bowl. Stir in corn syrup, sugar, Sailor Jerry Spiced Rum, butter, and vanilla until mixed well. Stir in pecans and chocolate chips and then pour into pie crust.
Bake at 375 degrees F for 10 minutes, then lower the temperature to 350 degrees F and bake another 30-35 minutes or until pie sets up. Set on a cooling rack for 10-15 minutes. Slice it up and serve!
It’s best to wash it down with more Sailor Jerry!
