Green Velvet Shamrock Pancakes
In celebration of St. Patrick’s Day, I whipped up some delicious chocolaty green velvet pancakes! I couldn’t stop there though.. I made them into little shamrocks! Find out how and get the recipe!
(Makes 8-10 medium pancakes)
1 cup all-purpose flour
½ cup powdered sugar
¼ cup unsweetened cocoa
¾ tsp baking powder
¼ tsp baking soda
¼ tsp salt
¾ cup liquid buttermilk (or ¾ cup water + 3 Tbs cultured buttermilk)
¼ cup granulated sugar
1 Tbs green food coloring
You will also need:
Heart shaped cookie cutters
In a large bowl, whisk together flour, powdered sugar, cocoa, baking powder, baking soda, and salt.
In a separate bowl, whisk together buttermilk, egg, granulated sugar, and food coloring.
Slowly add buttermilk mixture into dry ingredients until just mixed.
Heat a large skillet over low to medium heat and add a bit of butter to keep pancakes for sticking. Use ¼ cup measuring cup and pour out batter onto skillet once hot. Cook 2-3 minutes or until top starts to bubble and set up.
Flip and cook another minute.
Place cooked pancakes in a baking dish and place in the oven. Set oven at 200 degrees F to keep warm.
Use heart cookie cutters to cut out 3 hearts from one of the pancakes. Cut a “stem” from the edge of the pancake and arrange together to form a shamrock!
Serve with powdered sugar or syrup, wash them down with an Irish Sailor Coffee, and enjoy!
