One of our favorite late night spots in Portland is Santeria. They have phenomenal burritos and equally amazing drinks! I love spicy cocktails so I always order their Spicy Margarita which comes with a kick of habanero! To celebrate Cinco de Mayo and to pay tribute to Santeria, I thought I would give the habanero margarita a shot!
1 ½ cups (12 oz) silver tequila (Preferably Patron or Don Julio – Tequila is one liquor you don’t want to go cheap on!)
1 habanero pepper
Since I planned on making different flavors of margaritas, I didn’t want to infuse the entire bottle. About half of a 750ml bottle is 12oz so I poured 1 ½ cups into a large canning jar. Cut the habanero in half and drop it into the canning jar. Screw the lid on tight and let it sit for 24 hours. (I love really spicy things so I would probably let it sit for 48 hours next time, but it still had a nice spice to it.)
For one margarita:
Lime wedges to line glass and garnish
Coarsely ground salt
1 ½ oz habanero tequila
½ oz orange curacao
1 Tbs agave syrup
Juice from two limes
Take a lime wedge and run it around the edge of a margarita glass and then dip the rim in coarse salt.
Combine all ingredients in a cocktail shaker with ice and shake well. Serve over ice or straight up.
