The weather is warm and it’s the perfect season for sipping drinks on the porch, grilling, and throwing parties! I’ve made this tasty concoction for several of my guests and it’s a hit every time! Fresh lime juice and mint compliment the pineapple infused Sailor Jerry Rum perfectly to make this tropical cocktail!
To make pineapple infused Sailor Jerry Rum:
8-10 pineapple chunks
1 cup Sailor Jerry Rum or enough to cover pineapple chunks
-Place pineapple chunks in a large canning jar and pour rum over the top. Screw the lid on tight and place in the refrigerator for at least 48 hours. Once the pineapple has infused the rum, strain rum through a wire mesh strainer into a separate container. You can eat the boozy pineapple chunks plain or use them in a Sailor Split like I did!
(Makes one drink)
2-3 mint leaves
3oz (3 shots) pineapple infused Sailor Jerry Rum
Juice from one lime
Pineapple chunks, lime wedges, and/or mint leaves for garnish
**If you don’t want to wait for the pineapple to infuse the rum you can always mix 3 parts Sailor Jerry Rum and 3 parts pineapple juice.**
In a cocktail shaker, muddle the mint leaves with the end of a wooden spoon. Add ice and pour in rum and lime juice. Shake well and strain into glasses (I like using margarita or martini glasses to make it fun and festive) Add a garnish (don’t forget a drink umbrella as well!) and serve!
