Memorial Day is next Monday which usually means a lot of get-togethers, pot-lucks, and picnics over the long weekend! Bring this simple and healthy side dish to your event and have your guests coming back for seconds and thirds! Using whole grain pasta, light dressing, and fresh ingredients you can enjoy this pasta salad guilt free.. which might take away some of the guilt you had earlier about the giant plate of barbecued ribs and second slice of apple pie you splurged on! ; )
1 box (16oz) whole grain rotini, macaroni, or farfalle pasta
½ cup Lite Balsamic or Italian salad dressing
1 cup grape or cherry tomatoes, halved
½ cup kalamata olives, halved
½ cup fresh basil leaves, torn into pieces
1 cup crumbled Feta cheese
Cook pasta in a large pot of salted boiling water until al dente (about 7-10 minutes). Drain and rinse under cold water. Shake out excess water and transfer to a large bowl. Add salad dressing and toss until pasta is evenly coated. Add tomatoes, olives, basil, and Feta. Toss until ingredients are well mixed.
Serve right away or cover and refrigerate the night before. Since the refrigerator will take away some of the moisture, it might make the pasta a bit dry the next day. Drizzle a little bit more salad dressing over the pasta and toss before serving!
