During the summer I probably eat my body weight in zucchini! It’s healthy, easy, versatile, and has wonderful flavor! Taking only 5 minutes to prep and 20 minutes to cook, this recipe makes a healthy Italian-inspired side dish or main dish for the whole family to enjoy!
2 zucchinis, cut in half lengthwise
1 Tbs olive oil
Salt and freshly ground pepper to taste
3-4 Tbs grated Parmesan cheese
6-8 Tbs shredded mozzarella
Preheat oven to 400 degrees F and line a baking sheet with parchment paper.
(1.) Place zucchini halves, skin side down, on prepared baking sheet (you can always cut a small strip off the back of the skin side to get the zucchini half to lay level). Brush tops with olive oil and season with salt and pepper. (2.) Sprinkle grated Parmesan on and (3.) then top with shredded mozzarella. (4.) Place in the oven to bake for 20-22 minutes or until cheese is lightly browned and bubbly.
Serve with a side of pasta and enjoy!
