I’ve always felt that sparkling wines were reserved for special occasions only, but why wait?! Celebrate the last few weeks of Summer with Ruffino’s Prosecco in this citrus infused sparkling cocktail!
(makes one cocktail)
1oz London dry gin
¾ oz simple syrup (or make your own! ¼ cup white sugar and ¼ cup water – instructions follow)
Juice from half a lemon
A dash of Angostura Bitters
3-4 fresh raspberries
3-4oz Ruffino Prosecco, chilled
To make simple syrup, combine water and sugar in a small sauce pan. Bring to a boil and stir until sugar is dissolved. Remove from heat and let cool for 15 minutes.
In a cocktail shaker, combine gin, simple syrup, lemon juice, bitters, and fresh raspberries. Add a handful of ice and shake. Strain into a cocktail glass and top with chilled Ruffino Prosecco.
Garnish with a fresh raspberry and lemon peel. Serve right away!
