The Super Bowl is coming up and if you made a resolution to stick to a healthy diet this year, this day could really test your willpower! Instead of sitting as far away from the snack table as you can, try this ‘skinny’ approach to mozzarella sticks! They have all the flavor, crunchy outside, and gooey melted cheese inside as regular mozzarella sticks, but a fraction of the calories! I used low-fat mozzarella, a wonton wrapper instead of a heavy flour and bread crumb coating, and they’re baked instead of fried. So, go ahead, indulge a little!
The recipe is for 12 mozzarella bites which will feed 2, but it’s really easy to adjust for more. One string cheese will make 4 wonton bites and you should have more than enough egg wash with just using the one egg.
1-2 Tbs olive oil
1 Tbs water
3 low-fat mozzarella string cheese sticks
12 wonton wrappers (the small ones, not the eggroll size)
Marinara for serving (try my 5 Minute Red Sauce!)
Preheat oven to 375 degrees F (190 degrees C) and pour olive oil onto a baking sheet.
Start by whisking egg and water in a small bowl.
Cut your string cheese into fourths.
Brush one whole side of a wonton wrapper with egg mixture and place a piece of cheese in the center.
Fold sides in, fold the top over, and roll towards you. Pinch together any ends that are loose. Roll mozzarella bite in olive oil on prepared pan. Repeat with remaining ingredients.
Place in the oven to bake for 4-5 minutes. Remove from the oven and flip mozzarella bites over. Place back in the oven to cook for another 4-5 minutes or until a light golden brown on top.
Remove from the oven and immediately sprinkle with salt.
Serve with a side of warm marinara and enjoy!
