Since we’re nearing the end of May and I STILL haven’t started my garden, I thought I would poke a little fun at myself by making “potted plant” cupcakes instead. Inspired by Martha Stewart’s Potted Chocolate Mint Puddings, I started with a base of moist fluffy chocolate cake, followed by decadent whipped chocolate mint frosting, topped off with crumbled Oreos and fresh mint. This is one ‘plant’ that you won’t feel bad about killing!
Call it dedication or procrastination, but before packing, running errands, and attending to last minute chores before we left for Iowa on Sunday morning, I decided, ‘I’m going to bake cupcakes for the blog instead!’ With New Year’s Eve tomorrow, I didn’t want to leave you guys hanging without a festive and delicious recipe to ring in 2014! I even incorporated my Sailor Jerry Chocolate Rum Balls to create the iconic ball drop countdown in New York City! Whether you’re keeping it low-key or throwing a big NYE bash, you don’t want to leave these cupcakes off the menu!
Remind me to never run errands on a weekend! I tried to go just a few places today and I found myself muttering obscenities the entire time. I decided to come home and find comfort in my two most favorite things… baked goods and beer! To celebrate the season finale of Game of Thrones tonight I picked up a bottle of Rogue’s Dead Guy Ale.. I figured it’s only appropriate since there’s at least a few hundred deaths every episode! The chocolate cake and fresh strawberry frosting makes for a delectable combination!
Halloween Cocoa Cupcakes
Even though Halloween is a month out, I wanted to bake some Halloween themed cupcakes today. You can use these for any occasion but I threw a twist to mine with some Halloween accessories! I’ve never been a fan of super rich cupcakes so if that’s what you’re looking for, you might want to throw a handful of chocolate chips into your batter, but if you like a more subtle cocoa flavor..these are perfect for you!
