It seems like when I host a big get together my main course goes a little (or a lot) past the time I thought it was supposed to get done. My guests don’t seem to notice or mind, but that’s because I make sure to keep a steady flow of cocktails and snacks going in the meantime. One of those appetizer standbys is bruschetta. It’s simple, quick, and as long as I’ve got some form of cheese, fruit, or veggie I can make a number of different flavor combinations. I decided on this particular one for spring because of it’s bright colors and flavors.
I lightly toasted the baguette slices with olive oil so they had a nice crunch and then spread a layer of creamy rich goat cheese. Then I added freshly sliced plums, peaches, and blackberries with a bit of honey across the tops for a sweet and savory combination. I finished each slice off with a few basil leaves that made for a delicious garnish as well as an added layer of flavor.
