After using my juicer for cocktails the last few times, I thought I’d be good for once and make an actual juice! As we’re heading into our warmer days, I wanted something that’s refreshing, light, and gives you plenty of energy to get through the day. This crisp summer green juice is exactly that! Sweet from the pineapple, slightly tart from the lemon, and a light finish of cucumber and mint. You wouldn’t even know that there are two huge handfuls of spinach juiced in as well! Since it makes two glasses it’s perfect for starting your day off with and taking the rest with you when you hit that mid-day slump!
Around Easter you start to see an abundance of carrot cake recipes, eggs, and all things bunny related, so I thought I would stay in theme with a fresh carrot and ginger juice! It’s sweet with a hint of spice from the ginger and it leaves you feeling refreshed and energized! Skip the carrot cake muffin for breakfast (even though they’re addicting and delicious) and try this fresh juice instead!
Let’s just get this out of the way… Beets taste like dirt. They’re just one of those vegetables that you have to learn to love and I’ll admit I’m still working on that. A great way to sneak these vitamin packed root vegetables into your diet are through juices. We’ve been feeling kind of sniffly with all of the weather changes, so I really wanted to boost the antioxidants and vitamin C in this juice. Blood oranges not only contain more vitamin C than any other citrus fruit, but they’re also very sweet which helps mask that ‘earthy’ flavor of the beets! Throw in a handful of blueberries and you’ve got one delicious immune-boosting juice!
It’s been awhile since I’ve posted any juice recipes, so I thought I would share my favorite summer juice! It’s light and citrusy with a refreshing twist from fresh ginger!
Orange Energy Juice
I’m going to sound like a juice head.. no.. not the greasy muscle-y angry ones that you’re thinking of.. REAL JUICE! I was extremely skeptical about trying juiced vegetables and fruits together, but couldn’t be more surprised with how delicious they are! Fruits have such great natural sweetness that it overpowers any vegetable in the juice. Our favorite time to make one is in the morning or before the gym when we want a boost in energy and this particular juice combo does exactly that!
