Cilantro and Lime Rice
I love this rice! I make it all the time as a side dish or to pair with chicken. It has a great zesty flavor and you’ll wonder why you ever used store bought rice in the past!
1 cup of long grain white rice (not instant)
1 Tbs olive oil
2-3 cloves of garlic (minced)
1 ½ cup chicken broth
3 Tbs lime juice
1 tsp salt
¼ cup chopped cilantro
Zest from one lime
Add olive oil to a medium sized sauce pan and heat on low for 2-3 minutes. Add rice and garlic to pan and saute on medium heat for 3-5 minutes. In the meantime, bring chicken broth to a rolling boil in a small sauce pan or heat in the microwave in a liquid measuring cup.
Add chicken broth, lime juice, and salt. Please please please be careful when pouring in the chicken broth! I have given myself so many steam burns because I was in a hurry and just dumped it in. Slowly pour in or even wear an oven mitt and you’ll be fine! Stir ingredients together and cover and cook on low for 15 minutes.
Stir rice occasionally and add a bit of water if it looks dry. Once your rice is fully cooking, stir in chopped cilantro and lime zest.
Garnish with a few sprigs of cilantro and a lime wedge and serve! I usually put chicken on top of mine like I did for the Spicy Pineapple Chicken. Enjoy!
