Spicy Chicken and Bacon Club with Avocado Lime Mayo
Give this classic sandwich a refreshing twist with avocado lime mayo! They’re light but still filling and we loved them so much we had them two nights in a row!
2 chicken breasts
2 tsp honey
2 tsp lime juice
2 tsp hot sauce (I like Cholula in the Chili Lime flavor!)
¼ tsp cracked black pepper
3 strips of thick cut bacon, cut in half (fits on the sandwich better!)
2 whole wheat sandwich buns
For the Avocado Lime Mayo:
1 ripe avocado, pitted and removed from skin
Juice from one lime
1 Tbs hot sauce
¼ tsp kosher salt
½ cup mayonnaise

Combine honey, lime juice, hot sauce, and pepper in a zip-lock bag and add chicken. Tattooed Martha Tip: Put the bag into a glass and fold the edges over. It makes it easy to add your ingredients and chicken without it tipping over!
Seal it up and shake bag so marinade coats chicken evenly. Place in the refrigerator to marinate for 30 minutes and prep your other ingredients.
Lightly pepper bacon and cook in a large skillet until done to your liking.. chewy or crispy! Place strips on a paper towel and set aside. Drain bacon grease from skillet, but do not wipe it out or clean it! You’ll find out why in a bit..
Next you can prep your mayo!
In a small bowl, combine avocado and lime juice and mash with a fork until most of the large lumps are gone and it forms a smooth paste.
Add hot sauce, salt, and mayo and stir together until all ingredients are well blended. Cover and place in the refrigerator until ready to use.
When chicken has finished marinating, heat skillet (the same one the bacon was in) on a low-medium setting, and toss chicken breasts in. Cook for approximately 5 minutes on each side or until lightly browned and chicken is no longer pink in the middle.
Place chicken breasts on buns (SANDWICH BUNS! Perverts..), add bacon strips and other toppings. Top with avocado lime mayo and serve!
