Spicy Pineapple Chicken with Mango Avocado Salsa
Sometimes having chicken for dinner just sounds so dull, so liven it up a bit with sweet and spicy fruit salsa!
2 boneless skinless chicken breasts
2 Tbs pineapple juice
1 tsp brown sugar
¼ tsp cayenne pepper

Place chicken breasts in a large zip-lock bag and add pineapple juice, brown sugar, and cayenne pepper. Shake bag to mix up ingredients and coat the chicken. Let them marinate in the refrigerator for thirty minutes.
In a large skillet, heat a tablespoon of olive oil over medium heat. Add chicken breasts and cook about 8-10 minutes on each side or until cooked thoroughly. They should develop a nice glaze from the brown sugar and pineapple juice.
Plate the chicken, cover the top with salsa, and serve!
