If there’s anything I’ve learned since I started cooking, it’s that Sailor Jerry Rum makes everything taste better! These orange rum glazed chicken breasts are no exception! Everything just caramelizes perfectly on the chicken breasts, keeping them juicy and full of flavor. So pour yourself a glass and get cooking!
2 boneless skinless chicken breasts
Juice from half of an orange
2 Tbs honey
2 capfuls of Sailor Jerry Rum
¼ tsp cayenne pepper
Salt and pepper to taste
1 Tbs olive oil
Add all of the ingredients except for the olive oil into a large freezer bag, shake to coat chicken evenly, and place in the refrigerator to marinate for 1 hour.
Heat olive oil in a large skillet over low-medium heat. Add chicken breasts once skillet is hot and set the bag with the excess marinade aside. Cook the chicken breasts for 3-5 minutes on one side or until nicely browned on the bottom. Flip the check breasts over, pour out some of the marinade on top of the chicken (just enough to coat) and discard the rest.
Cook another 3-5 minutes. Turn heat to low and cook another 3-5 minutes, flipping the chicken every minute or so to evenly coat and glaze. If you leave it on one side for too long the glaze can burn so just keep an eye on them.
Cut into the underside of the chicken breast to make sure it’s cooked thoroughly. Plate the chicken and serve with a side salad!
