Normally I wind up with a lot of leftover food since it’s just my fiancé and I, but we had some friends over right as I was finishing up this dip. After I got the photos I needed I set it down and it was devoured within minutes! I honestly think if they wouldn’t have been here, it still would have been devoured within minutes! It’s that addicting! Serve it with club crackers and it tastes EXACTLY like a BLT!
6-7 strips of bacon
½ cup mayonnaise
½ cup sour cream
4oz cream cheese, softened
½ cup shredded cheddar cheese
2-3 roma tomatoes, seeds and sliminess removed and diced
2 Tbs finely chopped red onion
Shredded lettuce to top the dip after baking
Cook bacon in a large skillet over medium heat. I like to season mine with freshly ground pepper, but this is optional. Cook until bacon is crisp and place on a paper towel lined plate and set aside to cool.
Preheat oven to 350 degrees F.
(1.) In a medium sized bowl, combine mayo, sour cream, and cream cheese until mixed. Stir in shredded cheddar. (2.) When bacon has cooled, cut or crumble the strips into small chunks and add to dip. Stir in half of the diced tomatoes and 2 Tbs of red onion until combined. (3.) Transfer to a small baking dish (in a pinch you can use a pie pan or small cake pan too!) and (4.) place in the oven to bake for 20-25 minutes or until cheese is lightly browned around the edges.
Top with remaining tomato and shredded lettuce and serve with club crackers!
