Herb Crusted Pork Chops

October 2, 2013

Tattooed Martha - Herb Crusted Pork Chops (4)

My latest obsession has been Gordon Ramsay’s show, The F Word. Every season is on Hulu and it’s been entertaining, inspiring, and informational! One of the recipes he shows how to cook is herb crusted rack of lamb. I was inspired to use some of the same techniques and ingredients, but with pork chops instead! The recipe was simple and absolutely mouthwatering!

Ingredients:

3-4 large pork chops

Freshly ground salt and pepper to taste

2 Tbs olive oil

½ cup parmesan cheese, grated

1-2 sprigs of rosemary

1-2 sprigs of sage

3-4 sprigs of thyme

1 Tbs olive oil

(1.) Season both sides of the pork chops with salt and pepper. (2.) Heat olive oil in a large skillet over medium to high heat. When hot, place pork chops in. Use a fork to press down on the pork chops to seal the flavor and juices in. (3.) Cook for 3-4 minutes on each side or until lightly browned around the edges. (4.) Place on a plate to let them rest while you’re preparing the crust.

Preheat oven to 400 degrees F (204 degrees C) and line a baking dish or cookie sheet with foil.

(5.) Remove rosemary and sage leaves from the stem and (6.) place in a food processor along with thyme, parmesan cheese, and tablespoon of olive oil. Process until finely grated. Pour herb mixture into a shallow dish or plate. (7.) One at a time, place pork chops into herb mixture, flipping to coat, and then (9.) place on prepared baking sheet. Place in the oven to bake for 10-12 minutes or until thoroughly cooked. Just cut into the underside of one of the pork chops to ensure it’s cooked all the way through.
