Hello Tattooed Martha fans! I am thrilled to finally be able return the favor of guest posting for Sasha! She was kind enough to lend her talents to Gypsies Crafts & Treats while I was in the process of moving from Texas to Virginia. Now that she is busy settling into married life, I am taking the opportunity to give her a break, allowing her to enjoy being a newlywed, and to share my recipe for this tasty summer sipper.
This Pineapple Basil Mojito is the perfect way to beat the summer heat, and sip your way to exotic escapes!
(makes 1 drink)
4-6 mint leaves
2-3 basil leaves
3-4 pineapple chunks
1 lime cut into wedges
Start with adding sugar to a tall glass. I like to use sugar cubes, because they are just so darn cute. If you are using cubes, crush them before continuing.
Add mint and basil to glass and gently bruise leaves with muddler or wooden spoon. You don’t want to destroy the leaves, or they will turn bitter. You want to simply release the flavor and aromas.
Next, add all but one lime wedge and pineapple chunks, and press with the muddler or spoon to release juices.
Top with rum and ice, (to mix ingredients well, simply pour into a shaker or other glass, then back into serving glass), top with soda water and garnish with reserved lime wedge.
*If you don’t like floaties in your drink, you can strain it into your serving glass, then add ice, soda, and garnish.
